When to brew it
A dependable first Switch brew. Rinse the paper with the valve open, discard the rinse water, then close the valve before starting.
Why it works
The closed valve keeps the water in contact with all the coffee for a two-minute steep; opening it produces a filtered finish.
Step by step
15 g coffee and 250 g water. Weights are the total on the scale. The quoted line is what Pour says out loud at that moment.
- 50 g
Bloom, switch closed
With the valve closed, wet all the grounds to 50 g, then rest to 0:30.
Pour says:
With the switch closed, bloom to 50 grams.
- 250 g
Fill to 250
Keep the switch closed and pour to 250 g. Cover if you have a lid.
Pour says:
Keep the switch closed. Pour to 250 grams.
Steep
Leave the switch closed until 2:00.
Pour says:
Steep with the switch closed until 2 minutes.
Open switch
Open the valve at 2:00 to release the coffee.
Pour says:
Open the switch now.
Drain
Allow the coffee to drain; aim to finish near 3:00.
Pour says:
Let it drain. Aim to finish near 3 minutes.
Brewing a different amount? Pour scales every pour to your dose and keeps the 1:16.7 ratio.
